An authentically prepared classic. Simple and delicious - using guanciale, cured pork cheek, is the key. The name actually comes from Italian 'guancia', meaning cheek. It has a distinctive, very 'porky' flavour and as the fat renders during cooking this flavours the entire dish. And of course, quality pecorino, a hard Italian sheep's milk cheese which is traditionally used in Carbonara.
There are some strong flavours here so lets pair with something light and fun.
